Have you ever heard of soy caviar? I hadn’t until I watched Morimoto Asia executive chef Yuhi Fujinaga create these tiny “bubbles” of a soy mixture.
It’s part of just one of the dishes Fujinaga will present this upcoming Tuesday (Feb. 28) at Wok and Wines, a dinner that will be expertly paired with wines by master sommelier George Miliotes of the under construction Wine Bar George.

The menu for “Wok and Wines” features the following courses:Bluefin Toro tartare with soy caviar (check out the video above for a look at how these soy sauce “bubbles” are made ) and Jamon Iberico crisps paired with Ruinart Rosé Champagne from France. ‘Bag of Pho’ local lionfish with Hudson Valley Foie Gras dashi, mitsuba and rice noodles paired with Raats Original Chenin Blanc from Stellenbosch-South Africa. Slow Roasted Crispy Baby Pig with Chinese black bean trotter jus and hot spring Jidori egg paired with Selbach-Oster Riesling Feinherb from Mosel-Germany Green Tea Panna Cotta paired with Broadbent Colheita Madeira from Portugal
